This recipe has been floating around for years and years, in fact every year for my birthday this would be the cake I would ask for. And I’m oldish, so I really mean years and years.
It’s simple and so good, although you should make it in the morning or even the night before you want to serve it so it has time to get nice and cold.
All you need is a yellow cake mix, a jar of hot fudge, one container of cool whip and some Creme de Menthe liqueur. If you like to make Grasshoppers you may have this in your home already. Just saying. I suppose you could also use a mint syrup but I haven’t tried it with that so proceed at your own risk! Don’t worry, the alcohol bakes out of the cake, it’s safe for kids!
Mix up your cake per the instructions on the back EXCEPT you want to replace 1/2 the water with the Creme de Menthe. So my recipe called for 1 cup water, I did half a cup of water and half a cup creme de menthe. Pour into your pan and get ready to pop that baby in the oven! My glassware looks dirty but I did crisco and flour my pan, I promise we wash our dishes here.
I didn’t bake the whole 34 minutes or whatever the box called for, so maybe check on your cake a little early? Anyways, after the cake is done, I let it cool for a bit and then I throw mine in the fridge to get nice and cool.
When I know it’s not warm anymore, I heat up that jar of fudge sauce for about 30 seconds to soften it up. Spread the hot fudge all over the cake and pop it back in the fridge to cool it down some more.
Finally, take the container of cool whip, stir it a bit, add a teaspoon or so of creme de menthe right into the cool whip and stir it around some more. It should be a very pale green color and have just a hint of mint flavoring, you don’t want it to be overwhelming and not enough to get people drunk on either. Slap that on top of the cake and you’re done!
